A La carte gluten-free cakes
I think each of us, exclude from the diet flour and some other very common foods, ask yourself :"What will I eat? What are my favorite snacks?" Do not despair. As life shows, nothing is impossible, if something the person really wants!

Ingredients

  • Quinoa

    100 g

  • Buckwheat flour

    120 g

  • Millet

    120 g

  • Coconut flour

    70 g

  • Psyllium

    25 g

  • Coconut shavings

    40 g

  • Melted butter

    30 Tbsp

  • Coconut oil

    20 Tbsp

  • Pumpkin

    175 g

  • Carrots

    1 piece

  • Salt

  • Water

    900 ml

Cooking

1. Melt the butter in a bowl. Add flour, psyllium, and coconut flakes. Mix well.

2. At this stage, add a little boiling water. Not all at once, not in a hurry. Allow dough to stand until the flour absorbs the liquid. Test look, whether to add more liquid. The dough begins to gather into a ball, thanks to the psyllium. .

3. Add the chopped vegetables. Carrots and pumpkin grated on a medium grater. Mix well.

4. It looks like our dough. Soft, supple and not at all like gluten-free. Put the dough (food wrap) in the refrigerator, preferably overnight. Or in the morning for the whole day, so it is well cooled.

5. Take out chilled dough. Roll out between two sheets of parchment. The dough, which does not work at the moment, it is better to keep in the fridge! IT IS IMPORTANT!

6. Measure the diameter of our form, add the height of bumpers. Cut out the circle and with blades, placed in the form. The diameter of my mould - 11 cm.

7. Form a basket from dough in the form. Put the shapes in the fridge for an hour or two.

8. Preheat the oven to 180 degrees. Spread the filling in the form.

9. For the filling lay out the pieces of rolled dough.

10. Put pies in the oven for 30-40 minutes. Depends on the juiciness of your toppings. 15 minutes before end of baking, brush top of cake with egg yolk, diluted with drop of water. Remove the ring form and see whether the cooked dough (if filling is very juicy). PR is necessary, put pie, without the ring, in the preheated oven for 10 minutes.

13. Cut better well chilled (with my knives, for sure!). The rule that I usually ignore! Or not to cool to taste! Bon appetite!:)
