It nezateylevaya, but a very interesting dish I learned from my mother in law, for which she was very grateful. Easy to make, but with a rich flavor. Goes well as a separate dish. It is served with ayran, it is yogurt.

Cooking
Spinach wash, cut off the roots.
Separately chop the tough stems (1-1. 5 cm) and leaves (not finely).
In boiling salted water (salty like sea water) to lower the stems. Let the water boil again, then add the leaves. While stirring, boil for 2-3 minutes. The water should not boil.
To drain the water. Wait until the spinach cool and squeeze it well with your hands.
On a well-heated pan with vegetable oil (the oil can not regret) to lay eggs. Their intensely stirring, to wait until they curdle.
Add the spinach and stew over high heat (the crust should not be formed) 3 minutes, stirring all the time. For those who like spicy you can add red pepper flakes. Salt when frying, do not add (salt was in the water)!
