Many of you probably know of Baikal omul. Well, who knows, I can only say that Cisco is a very delicate and tasty fish. Present the method of its preparation. It is possible in a similar way to prepare any fish. But I live in Irkutsk and my favorite fish is the omul, - no, not CISCO. ;)

Cooking
Fish cleaned and gutted. Potatoes (I have 3 PCs, but two is enough) to cook in their skins and chop into small cubes. Carrots clean, RUB on a coarse grater and slightly to fry on vegetable oil.
At the head of the fish cut in the ridge on the inner side (the very head is not cut off) and separate it from the fillet, try to remove all the bones. The tail is also cut and remove the backbone. Get the fillet from head to tail.
So we have: roasted carrot, cut into small cubes potatoes, fillet of fish with head and tail and cream village.
Carrot + potato + 2/3сливок = to mix, salt to taste. To stuff fish, fasten with toothpick.
Lay stuffed fish on the sheet (the sheet I made a Teflon Mat and then prepared the fish can be easily removed from the sheet) and from top to pour the remaining cream. Put in a preheated 230 degree oven for 20 minutes.
Voilà - the Most tasty and tender stuffed fish is ready.
