Description
In this case, the omelet is stuffed pancakes in Italian. The main difference from our pancakes is a Bechamel sauce which is poured over the dish. If you use instead of cow milk, vegetable milk substitute (rice water, rice milk, soy milk), this dish can be eaten in the post.

Cooking
Carrots and celery grate on a medium grater (I used food processor) and sent to languish in the pan on a small fire. We need them to be softened.
Start the sauce. In the original it is made with cream, but for my taste the butter and cream - too greasy, so I do just on milk (often even at low interest). Melt in a pan the butter and fry in it the sifted flour to zolotisty. If it is just to warm, the sauce will not be his flavor. Then a thin stream with constant stirring enter the milk. At the end add salt and optional black pepper (I added).
Knead the dough for pancakes. The consistency of liquid cream, so that they have turned out thin.
On one side the pancake is ready, flip it to bring the other side and, without removing from the pan, put on it a couple of teaspoons of the sauce with carrots and celery. Wrap and on the plate. In the end pour all omelettes Bechamel.
