Soup made of shrimp shells
First time for this recipe the soup I made, purely out of curiosity. I was wondering what happens. What happened, plunged in a pleasant shock to me and my family. The soup turned out tender, very tasty, awesome and flavorful. Every now and again, treat yourself to your favorite shrimp, from the "waste" of indulgence cook this wonderful soup. A little long, but worth it!!!

Ingredients

  • Shrimp

    200 g

  • Onion

    2 piece

  • Carrots

    1 piece

  • Tomato paste

    2 Tbsp

  • Cream

    0.5 l

  • Cognac

    50 ml

  • Vegetable oil

    1 Tbsp

  • Salt

Heat the oven to 200 degrees.

The shrimp shells (you can use chitin shells of any seafood, preferably with heads) put in a container, put in oven and bake 15-20 minutes until a strong odor.

Carrots and onions clean, cut into large chunks. In a saucepan, pour vegetable oil and fry the vegetables on it.

Get the shells - that's what happened.

Add the tomato and baked shell, pour all the water so that water covered the contents of the pan and cook for 2 hours on a slow fire, adding hot water as needed.

The resulting "slurry" is filtered through a sieve, pressing the shells with a spoon or pestle.

Put again the saucepan on the stove, bring to a boil, pour onto the surface of the cognac and ignite as soon as the flame goes out, cover with a lid and tormented on the lowest heat for 5 minutes (to take a picture this time – I failed, not enough hands))).

Separately in a small saucepan boil the cream.

To the soup, stirring constantly, pour in the cream in a thin stream, add salt, allow to boil and immediately remove from heat. Soup is ready – welcome to the gourmet world)))!!!
