This year tasted a pumpkin, I can't stop! And all thanks to the "Red week", which was organized by Irina (irina_vip). Today, the pumpkin sauce with vegetables. Full bodied taste - the acid of the tomatoes balances the sweetness of the pumpkin, and bell pepper, garlic and onion provide a unique flavor. And the color is stunning! Very, very tasty! Cooking
Pumpkin cut into pieces, red sweet pepper to clear of seeds, cut in half. Clean the onion and cut into quarters. Tomatoes cut in half. Lay a large baking sheet with foil, drizzle with half of olive oil, put on it vegetables, season with salt and pepper, sprinkle with dried herbs, pour the remaining oil and bake until tender - about 40-45 minutes.
Cool slightly and remove the skin from the tomatoes and peppers. Chop the vegetables until smooth. Add the lemon juice and stir.
Put in a bowl with lid, lock it and put it in the fridge. Can be stored 5 days. You can use it for cooking pasta, risotto or just with some bread. Bon appetit!
