Cooking
Slice the shallots or other small onions (3 pieces), carrots (4 pieces) and 1 tooth. garlic. In a saucepan heat a little rust. oil over medium heat and sauté the vegetables for 5 minutes, Then remove them.
If necessary, add a little more oil. Increase the heat and sear the meat (1.5 kg), cut into large cubes, until Golden brown.
Add 5 tbsp flour, mix well, season with salt and pepper. Add roasted vegetables, sliced mushrooms (250 gr), thyme (3 sprigs), 1 tablespoon of tomato paste, 200 ml water and 200 ml of wine. Salt and pepper again, stir. Reduce the heat almost to low and simmer with the lid closed 2-2,5 hours.
This beef turns out tender and with a delicious thick sauce.
