Ingredients

  • Smelt

    0.5 kg

  • Butter

    50 g

  • Dry white wine

    200 ml

  • Salt

    0.5 Tbsp

  • Dill

    1 coup

Fish cleaned and gutted.

Sprinkle the smelts with sea salt, stir and put in the cold for 0.5 hours.

After half an hour, half the quantity of butter melt in a saucepan with a thick bottom and add a couple of sprigs of dill.

Put the smelt.

The remaining piece of butter cut into cubes and put on top of the fish. Add a couple of sprigs of dill.

Pour dry wine, cover and simmer on low heat for 30 minutes.
