Cooking
4 eggs divided into whites and yolks. Whip the egg yolks with 3 tablespoons sugar until the weight increase by approximately three times.
Beat 4 protein to the formation of stagnant foam, then, without stopping to whisk, add 1 tablespoon sugar to the whites you better keep in shape.
Add a couple tablespoons of beaten egg whites to the yolks with sugar and stir gently. Add the flour and mix well. Add the dough with the remaining beaten egg whites and very gently, movements from top to bottom, to mix the whites into the batter until a homogeneous mass.
Put the dough on a baking sheet lined with parchment. Bake in a preheated oven at a temperature of 150-170 degrees for 22-27 minutes. Cool.
The finished cake to put on the table and, if required, align the edges. Cut the cake crosswise into two equal parts. On the bottom layer apply a half of jam (I had Apple and lemon, which gave the cake the required acidity and made certain piquancy. I advise you to use a jam of such a plan, for example, plum, lemon or lime). Put the second layer of cake, apply remaining marmalade.
Nuts slightly grind (not to a state of crumbs). Sprinkle over the resulting "cake". If you have when baking a sponge cake turned out uneven, and were cutting, chop them. Sprinkle biscuit crumbs our billet.
Cut into serving cakes of any shape.
I got 18 cakes the size 5 on 4). Put in the refrigerator (or in the freezer for 5 minutes).
Beat the remaining 3 protein to peaks, gradually powdering the sugar (amount of sugar can vary - it all depends on how sour you jam and what you have a sweet tooth).
Remove the cakes from the freezer and capping protein cream top and sides. Put cakes in a preheated high oven for 2-3 minutes until just brown protein (you can put it under the grill or, if possible, use a kitchen blowtorch).
Remove from the oven, cool and serve. Bon appetit! I cooked these brownies for a small family celebration... So, most of the guests didn't believe that the cakes are home-made and especially that I am their author. Guests were convinced that these cakes are purchased in a candy store. And my parents had great difficulty to keep it that way (but the most annoying and stubborn even ran to a nearby bakery to make sure that there is not sell such cakes). At the end of the tea party I was invited to open the culinary point at a nearby market (in jest, of course) and treat all comers!
