Duck breast with liver and caramelized figs
Now we have the season of figs and I really like its combination with the meat. This sauce is perfect for any meat.

Ingredients

  • Breast of duck

    2 piece

  • Chicken liver

    1 piece

  • Salt

  • Black pepper

  • Soy sauce

    1 Tbsp

  • Honey

    0.5 tsp

  • Olive oil

    1 Tbsp

  • Figs

    5 piece

  • Butter

    25 g

  • Brown sugar

    2 Tbsp

  • Vinegar

    1 tsp

  • Salt

  • BlackBerry

Cooking

1. Breast wash, dry incision the skin. Soy sauce mix with butter, honey, salt and pepper. Marinate in this mixture the breast for 15 minutes. Then one breast, lay skin-side down, on top lay the liver.

2. Cover with second breast and it is good to tie with cooking string.

3. The pan to reheat, put our roll and fry on both sides until Golden brown. Now the thread can be removed.

7. In a pan, add the figs and stir for a few minutes to Carmelitas figs. then add balsamic vinegar and a pinch of salt.
