Vanilla risotto with chicken, mascarpone and mint
Risotto is a common Italian dish. It is made from a starchy, krugloozernoe rice special technology: hot broth (or water) are added to the rice in small portions and only after rice has absorbed the previous portion of liquid. Options cooking risotto very much, because the dish does not have the exact ingredients and ratio of ingredients. However, this risotto should be "fluidity" of the finished dish and creamy consistency. Try my version of creamy vanilla risotto with chicken and mint. Very tasty ;))

  • Butter

    50 g

  • Mascarpone

    150 g

  • Olive oil

    2 Tbsp

  • Salt

  • Mint

  • Broth

    900 ml

  • Dry white wine

    50 ml

Suitable for risotto Arborio rice of TM Mistral.

Chicken breast cut into cubes, fry together with chopped onions and vanilla pod (if not using vanilla) in olive oil until whitening.

Add rice, cook 1 minute while stirring. Pour in the wine and evaporate.

Then pour the water in small portions, cook stirring occasionally for about 20 minutes, until the rice absorbs all the liquid.

Then add butter, mix well.

Add the mascarpone. ***In the photo the half portion, 75 g. When I tried the dish, I lacked slivochnoe and I added the same amount.***

The risotto is ready!

Serve the risotto garnished with mint.
