Duck breast wash, cut clearly in half, the skin incision mesh, not reaching the meat. RUB some salt and freshly ground black pepper. For marinade mix olive oil, herbes de Provence and lemon juice, dip the breast in the marinade for 30 minutes, at least. I marinated an hour. Most importantly, the duck breast not to overcook and don't overdry. Preheat the oven to 200 degrees and put on a high heat frying pan. To get the breast from the marinade and quickly fry in a pan on all sides. Place on a plate and RUB with honey. Fold in the baking dish, add a sprig of fresh rosemary and send in the oven for 12-15 minutes, depending on desired degree of doneness. I kept my husband for 12 minutes, and it was pink and very juicy, and his 14 minutes because I like a bit drier.
