Duck with orange-lemon filling
The recipe was the result of thinking about what to do with this bird? As traditional , with apples, not "fountain", that I wanted to experiment. That's what happened.

Ingredients

  • Duck

    1.5 kg

  • Orange

    1 piece

  • Lemon

    0.5 piece

  • Ginger

    0.25 tsp

  • Black pepper

  • Soy sauce

  • Garlic

    2 piece

Cooking

Duck cut into chunks and marinate in soy sauce, add the garlic (crushed). Let stand several hours(3-4).

Orange zest, grated, lemon, cut into thin slices.

For filling, mix all the spices, add boiled water, pour the citrus fruits. Pour the mixture over the duck (the liquid should close the meat). Simmer at t 180 about half an hour. Maybe more, maybe less. Depends how old your duck. My probably turned 300 years old, because I have it extinguished two hours with a tail.
