Creperie a La carte pizza with an interesting sauce that is perfect for this pizza, and will serve as a worthy Supplement to other dishes.

Bake thin pancakes (I got yogurt). 2 pancake pizza will need 8 small pancakes.
For the sauce chop the tomatoes, onion, eggplant, bell pepper, herbs and garlic. All the vegetables saute in oil with spices (I use oil "Oleyna"), stirring constantly, until tender. At the end of cooking add the vinegar, sugar, salt and hot pepper. Warm up for a few minutes.
To cool, grind using a blender to smooth puree. The sauce is ready. It is thick, can be diluted with chicken broth to desired consistency. The sauce tastes like ketchup, and is well suited for pasta, meat, as an additive to soups and main dishes.
Forcemeat to fry until cooked in a small amount of oil, adding salt and pepper to taste.
Grate cheese on a grater. Leave 3 tbsp of sauce to lubricate the top layer of the pizza, and the rest mix with the minced meat, adding 2 tbsp of grated cheese and mayonnaise ).
Spread each pancake with the sauce with the mince, cover in half, again spread with sauce, and fold it in half.
The resulting segments lay close to each other in refractory form (as I have a big plate).
Lubricate the left half of the sauce and sprinkle with cheese. Similarly prepare the second pancake pizza. Put into a preheated oven under the grill to melt the cheese.
