Chakhokhbili - a stew of poultry, national Georgian dish. Originally made with pheasant (for cargo. of jojoba), but at present, of any poultry, especially domestic chicken. The dish is prepared from pieces of poultry stewed in tomato sauce with spices and garlic. A characteristic feature of the chakhokhbili is a preliminary (to extinguish) the so-called dry roasting the birds for 15 minutes without adding any fat. Sometimes when cooking this dish, water is not added, the moisture in the dish use only vegetables, mainly onions. It's a classic! The rest is the interpretation of cooks. To prepare the vegetables. To wash and dry.
Chicken wash, put in a pot, pour boiling water and cook for 35-40 minutes. Remove from broth and let cool. Broth to keep. Cut the chicken in small pieces.
Onions and carrots to clean. Cut onion into thin quarter-rings, carrot grate on a coarse grater. Bulgarian pepper clear from the core and cut into thin strips.
On the tomatoes make cross-cuts, lower them in boiling water for 1-2 minutes, then pour over ice water and remove the skin.
In a deep saucepan, sauté chicken pieces in vegetable oil until Golden brown.
Add the onion and cook, stirring occasionally, 8-10 minutes.
Add to the skillet the carrots and peppers and sauté on low heat for another 5 minutes.
Pour 1 Cup of broth, cover and cook on low heat for 10 minutes.
Add chopped into small pieces the tomatoes and simmer for another 10 minutes.
While the stewed chicken peel and finely chop the garlic. Wash the herbs and chop.
Grind in a mortar or in a blender with the herbs and garlic with salt until a homogeneous slurry.
Put the mixture into a saucepan, add the seasoning, Bay leaf and hops-suneli. Simmer until cooked, about 5 minutes.
