Tails catfish usually have little meat, but they are fatty and very tender. They are perfect for quick hot Smoking.
As the meat of catfish has no flavor, it perfectly absorbs spices and acquires a rich, interesting flavor and aroma. In the spices for marinating fish include orange zest, mint, fennel, garlic.
Pack tails marinated in a convenient package with a lock included in the kit, and take it camping.
Chips from the package need to pre-soak. Half an hour is sufficient that the chips have absorbed moisture and began to smolder, not burn in the grill.
Put the fish into a removable pan for the grill with holes through which will pass the smoke directly into the fish. On top of the fish need to cover the large metal container, or just a great dish.
