Description
Arancini is a dish of Sicilian cuisine. It is the fried balls of rice. The name of the dish got thanks to a rich yellow-orange color after frying in oil, giving arancini resemblance to small oranges. Try to offer 2 options - a classic meat filling and very simple, but no less delicious, stuffed with ham and Mozzarella.

Cooking
Prepare your ingredients. Green peas to defrost. Ham and Mozzarella into small cubes and stir. 100 g of cheese to grate. 70 g of cheese cut into small cubes.
Boil the rice in salted water until tender. Turmeric to dissolve in a little water and add to hot rice, a little stir, add 30 g butter and stir so that the rice is evenly colored in yellow. Then add grated cheese.
Put the rice in a flat dish, wrap it with cling film and leave for 1.5-2 hours to let the rice cool.
While the rice cools, prepare the meat filling. Finely chop the onion and fry until soft in a mixture of olive and butter. Then add the beef and cook, stirring occasionally, until the beef becomes brown.
Add the wine and cook until then, until it has evaporated.
Add the tomato paste, salt, pepper, mix well and cook on low heat for 10 minutes. Then add the peas, saute for another 10 minutes. Remove from heat and cool.
When the rice is completely cool, start to sculpt balls. For each ball will need about 2 tablespoons of rice. Of rice need to make the cake slightly less in size than the palm of your hand. On the cake put the stuffing. Then gently make a fist, holding the filling with your other hand. Try to keep the ball inside the air. Don't forget to put a few cubes of cheese in each ball with a meat filling.

In a bowl, mix 200 g of flour and 300 ml water if the rice turned out to be not salty, the dough can be salt. In a plate pour the breadcrumbs. In a saucepan heat the oil and bring it to a temperature of 160-170 degrees.
Dip the balls in batter, then in bread crumbs (to make the balls turned out more flavorful, the breadcrumbs can be more tightly pressed against the ball by hand) and dipped in boiling oil. Cook 3-5 minutes until Golden brown. Serve immediately.
