Cooking
Squid clean. We need carcass without "ears". Pour the shelled squid with boiling water for 2 minutes, the water is drained.
Take soy sauce "Kikkoman".
Fill the squid with soy sauce "Kikkoman", sprinkle with fresh-moloy with a mixture of peppers.
Mix everything together and put in refrigerator to marinate for 30 minutes.
Make a batter. Mix flour, cornstarch, salt and baking powder. You can take potato starch, but the Chinese prefer corn.
Add cold water and stir. I prefer beat with a mixer to avoid lumps. The dough should be the consistency of dough for pancakes. Also put the batter in the fridge.
Take out the chilled batter and marinated squid.
Dip the squid in the batter.
Fry in a deep fryer, a wok. I prefer the frying pan (skillet) with a thick bottom. Pour oil on embers. And drop in the butter squid rings in batter. The oil should be very hot.
Roast until it will turn brown, flip.
Prepared squid in batter put on a paper towel to rid of excess oil.
Serve immediately hot with any favorite sauce, including soy sauce "Kikkoman". If desired, sprinkle with sweet red paprika. Bon appetit!
