I wasn't going to post this recipe, as the recipe of dried meat, and therefore no step-by-step photos. But I have a different marinade (after searching the shops not found in Worcester sauce, which is needed for classic marinade, so I had to find other recipes and combine), so to speak, the drying method is different. You can use any lean meat. I got this time was pork, as good beef I could find. Cut the meat into thin plates, it is best to pre-freeze, and, of course, something sharp enough. To prepare the marinade, simply mix all the ingredients together and ready. Marinate the meat so that all the pieces were in the marinade, just stir carefully, because the meat may tear. Put the meat in the marinade for 6-8 hours in the refrigerator. After the allotted time to get the meat, arrange on the grid and drying. The lower tray drying I lined with paper to a drop of the marinade does not drip on the dryer. After 4 hours flip the meat, for more even drying. The total drying time is approximately 6-8 hours. The meat is ready, if it is elastic, bend or break.
Took a picture bigger to see, looks like meat after drying, the feeling is that it glows. To store this meat can be up to 4 weeks just in the apartment. If you need longer storage (I have before this is not reached:), ate before), then put the meat in a sealed container and put in the fridge or the freezer.
