Oatmeal muffins with dried apricots
Nice dough, felt the individual oat flakes. The addition of wheat bran provides not only an undeniable benefit to our body, but also the crispness of the cake - it becomes like shortbread. Although, if someone does not like bran, they can not put in the dough, replacing the corresponding amount of flour.

Oatmeal pour the yogurt, stir and leave to swell for 15-20 minutes. Dried apricots cut into pieces and roll in flour to be evenly distributed in the dough. To the oat mixture add the eggs, sugar, salt, soda, baking powder and vegetable oil. Stir well. Add flour and bran. Stir in the dried apricots.

Rectangular baking dish (I form size 12x20 cm) lay a parchment and pour the batter. Top form tighten foil. Put in a preheated 200*C oven for 40 minutes. Then remove foil and food processor before Browning the surface.
