To be honest I found this recipe as "Vegan zucchini bread". But making it just a little bit by changing the spices, the hand was raised so to write about it. This is a real cupcake, with a moist and tender texture. Zucchini can be traced only when You see greenish stripes. If you do not know, you will never understand that he is also lean. Help yourself.

Cooking
Mix all dry ingredients in a bowl. In another bowl, mix oil "Oleyna" unscented olive, coconut milk, sugar and all mix well.
Young courgette ( zucchini ) RUB on a grater and get a good squeeze. In makenow a lot we need to put 160 gr. already PRESSED zucchini. Mix well.
Add the dry part and knead the dough. Form 8*15 lubricate oil, sprinkle with flour and put the dough. If you want you can sprinkle coconut or crushed nuts.
Bake at t=170 for about 30-40 minutes until dry matches (as usual check the cupcakes). Allow to cool and can be cut.
