Kunafa with cheese
My acquaintance with this dish was not to the Eastern country, and in Western Sweden. My Iraqi studenci prepared this sweet for the holidays. Thin strands of dough, cheese, pistachios and a sweet syrup - what else can dream? Close your eyes and find yourself at the Arab feast...

Ingredients

Begin making the syrup. In the water put sugar and stir, bring to a boil. When the syrup starts boiling, low down the heat and allow to simmer for another 10-15 minutes. Then add lemon juice and rose water. Let the syrup cool down.

Melt the oil.

Share kadayif with your hands or grind in a food processor. Pour oil in a food processor with the dough or squeezing the dough with your hands, impregnate all the dough. Grease the form of oil. In many Eastern countries in the form poured a little seasoning-dye, but you can do without it.

Spread half of the dough and flatten, pressing with your hand.

Mozzarella and ricotta spread on the dough. (Photo only mozzarella. I decided to only do with this cheese, but after tasting, decided that with the addition of ricotta is much tastier.)

Spread remaining dough and flatten. Put in oven for 40 minutes, until Golden brown. Take out from the oven and allow to cool for about 10 minutes.

Take a plate or dish, cover the form and flip. (You can not turn over. It also depends which Eastern country doing kunfu. My students - the Iraqi Kurds have not turned and have not flattened the dough.) Pour the syrup. It's okay if the syrup seems too much. It absorbs quickly test.

Grind the pistachios and sprinkle kunafa. Feeding kunafa it is best to immediately, but it is delicious and cold.
