Cottage cheese cookies with Apple and coconut
This cookie is another of my experiment with cottage cheese. Love cheese cakes, it turns out tender, soft, with a slight acidity. Work with a cottage cheese dough is a pleasure! Additionally, this cookie is one of those "everything mixed and in the oven")). No special tricks there. If you don't like coconut, you can replace it with any finely chopped nuts. Instead of Apple you can take carrots. You can add orange or lemon zest. Fantasize!)))

In a bowl put the curd and softened butter. Mash with a fork to avoid large lumps. Add grated on a coarse grater apples.

Then add yogurt and shredded coconut, sugar, vanilla sugar, salt. All mix well and add flour sifted with baking powder. Knead the dough with a spoon, it will be viscous.

The finished dough spread with a spoon on a baking tray in small portions with a spoon or wet hands give a desired shape.

Bake cookies in a preheated 180 degree oven until a nice light brown color. The cookies crispy outside and soft inside.
