Carrot cupcakes with chocolate frosting
The last time I loved baking with carrots, in addition to any carrot cake, now have a recipe for carrot cake, which is prepared very quickly!

Ingredients

  • Flour

  • Prunes

  • Butter

    50 г

  • Cocoa powder

    3 ст. л.

  • Milk

    3 ст. л.

  • Sugar

To prepare the necessary ingredients.

Carrots grate on a fine grater, chop the nuts-you can add prunes. Add eggs, butter, sugar and honey. Beat well. Separately combine dry ingredients and stir well. To combine flour mixture with egg / oil, mix thoroughly. Mix in the carrots. Mix nuts and prunes.

Preheat the oven to 180 degrees. The dough is put into silicone molds (I have 12 pieces).

Bake for 30-45 minutes. Finished cakes remove from the mold, allow to cool.

You can then cover with chocolate or chocolate icing. For the glaze: pour into a container for boiling the sugar, add cocoa and mix well dry ingredients to avoid lumps. Add milk, butter, put it on the stove. Cook on a slow fire, stir continuously, making sure the weight does not overheat. Allow to cool and cover with frosting the cupcakes, top can be sprinkled with coconut, or decorate to your taste.
