Cream soup of spinach from Julia child
Very tasty, but very tasty turned out soup. So rich!

Ingredients

  • Spinach

    300 g

  • Onion

    1 piece

  • Broth

    700 ml

  • Figure

    3 Tbsp

  • Nutmeg

    1 pinch

  • Cream

    50 ml

  • Yolk egg

    1 piece

  • Black pepper

  • Salt

  • Butter

Cooking

To prepare the products. Onions I substituted leeks.

Onions to chop. Spinach well rinsed and dry. Remove the stalks. Leaves to cut.

To heat the butter.

Stew the onions for 2 minutes. If bulb, then 4 minutes.

Add to the onions spinach.

Cover with a lid (not completely, leave slightly open space) and cook on low heat for 5 minutes (in the middle of cooking to open and stir contents of skillet).

Then pour the broth, bring to boil and cover the rice.

Season with salt and pepper, add the nutmeg, stir, cover (not completely) cover and cook 15-20 minutes (until the rice is tender).

Grind the contents of the pan into a blender (or RUB through a sieve).

Separately vzbit yolks with cream,

Mix with the crushed ground. Pour into a saucepan and bring to a simmer.
