My colleague brought into work a jar of jam. I don't like sweets, but out of courtesy asked, what's it made of? The answer puzzled me... bitter and Bulgarian pepper. - And with what it eat??? - was my next question... - With cheese, or just on crackers smear. I love anything spicy and anything unusual... In my head flashed the thought, remembered the words of Vladimir Vysotsky: "I WAN, I want one!". And I asked for the recipe for this wonderful, unusual, spicy jam. Jam I called the name counterparts.

Cooking
Bell peppers wash and cut in half. Remove seeds and partitions
Hot red pepper wash, remove seeds and partitions. Attention!!! for this operation I recommend to wear thin rubber gloves and a bandage (or wear a headscarf), so that the nose was protected. Clean the peppers under running water, it will help you to avoid irritation of the respiratory tract. It is better to clean all the peppers, then rinse them in a basin of water.
Sliced pepper put in a pan, add red wine, sugar, salt. Cook for 1.5 hours on a slow fire
Remove the pan from the heat, shred the contents of the blender. Continue to cook on slow fire for 1.5 hours, skimming and stirring from time to time
Finally, our jam has thickened. Distribute it into sterilized jars and tighten screw caps. Let cool on the lids. If you intend to store the jam for a long time, it is possible to pasteurize the jars (boil for 10 min, taking care that banks don't touch each other: I was told you can use a cotton towel)
