Cooking
White beans pre-soaked, preferably overnight, boil until tender.
Celery root wash, peel and cut into thin strips.
Chop the onion and carrots
In a thick-walled pan warm up vegetable oil "Oleyna", add a pinch of cumin, put a sprig of rosemary, fry for 1 minute. Add chopped onion, crushed flat side of a knife and chopped garlic, sauté a couple of minutes, add the carrots, celery, fry for 2-3 minutes.
To the vegetables add the boiled beans, pour hot vegetable broth or water, bring the soup to a boil, reduce heat to boil for 1-2 minutes, season with salt.
Add the spinach and lemon juice. (My spinach was frozen, I pre-thawed a bit) bring the soup to a boil, cover and immediately turn off the heat. Let the soup to infuse for 15-20 minutes and serve.
Optionally sprinkle the soup with herbs and serve with croutons.
