Description
Carretes herring or snack in Tallinn, Estonian national dish. Incredibly tasty stuff. Delicate cold yoghurt jelly with flecks of salty herring and a bright dill and cucumber flavor. Cook for 5-6 hours before serving. Real turritis is based on sour cream, the highest fat content. Sour cream I did always, but decided to cook at home a thick yogurt, less fat and it turned out great! Help amazing sourdough from Aigo, it turns out delicious yogurt.

Cooking
To receive yoghurt from 1 liter of milk 1 sachet of need.
We will take two bags to make a thick yogurt.
Bags cut, pour the powder in a dry bowl.
Pour 1.5 liters of milk, stir well so the grains of the leaven completely dissolved.
Pour into jars. And put to skachivaetsya for 12 hours.
Here's a yogurt is obtained. To prepare tarrietia we will need two such jars, 200 g
Soak gelatine in 1/2 Cup cold water for 20-25 minutes.
Dill and green onions chop. Cucumber cut into small cubes.

Herring fillet cut into small pieces, like a fur coat.
Gelatin together with the water to heat in a saucepan almost to a boil to fully dissolve, allow to cool slightly.
Add the dissolved gelatin to the yogurt and carefully stir.
Divide gelatin yogurt into two parts. To one part add the onion and herring. Stir.
To another part add the cucumbers and finely chopped dill. Season with pepper and if required salt. Stir. I don't add salt, so brighter than the felt layers.
In portion glasses put first a layer of herring.
Top with cucumber-dill mixture. Put in the refrigerator for at least 5-7 hours, but better overnight!
Serve directly in portion glasses or if You make the molds, then turning the contents upside down!
