Cannoli a La Siciliana
Cannoli (ital. Cannoli, translated from the Sicilian Little tube) is a traditional Sicilian dessert which is a crispy wafer tube... the Recipe is in the oven taken from the magazine "La cucina italiana"

Ingredients

  • Flour

    300 g

  • Butter

    30 g

  • Cocoa powder

    15 g

  • Salt

  • Sugar

    2 Tbsp

  • Dry white wine

    1 cup

  • Cheese curd

    300 g

  • Chicken egg

    2 piece

  • Powdered sugar

    100 g

  • Rum

    1 Tbsp

  • Cream

    80 g

  • Candied

    18 piece

Cooking

Mix the flour with the sugar, salt, cocoa and butter.

Add the white wine. Knead the dough, wrap it in cling film and refrigerate for 1 hour.

This is a special tube for kanalow. You can do it yourself, roll out the rolls of foil (9 cm long and 4 cm in diameter).

Roll out the dough (4-5 mm thick). Cut from it squares 8 cm on the diagonal (use the prepared tube, and measuring the required size diagonally). The dough is screwed into a tube, as in the photo. I had 9 tubes.

Rolls put on a baking sheet covered with parchment. Bake them in preheated oven for 20 minutes at temp. 180°C. After that the tubes let to cool.

While they are cooling, make the filling: Ricotta (or cottage cheese) shall pound with powdered sugar and cream.

Add the rum. Put the bowl in the fridge.

Proteins separate from the yolks. Well whisk them with a pinch of salt until stiff.

Very gently mix the two masses (cheese and protein). Put in the fridge for 30 minutes.
