Description

Beet soup
Quite controversial was this soup. I liked it, husband not really, because of the sour taste. Recipe from "the Deli".

Ingredients

  • Beets

    400 g

  • Apple

    1 piece

  • Onion

    1 piece

  • Lemon juice

    1 tsp

  • Thyme

    1 piece

  • Cumin

    0.5 tsp

  • Salt

  • Cream

Cooking

Beets pre-boiled and cleaned. Apple and onion cut into fairly large slices.

Pour water to slightly cover the apples and onions. Cook over medium heat until tender.

Add the beet slices. Cook for about 5 minutes all together.

Add leaves of thyme..

..lemon juice..

..cumin, and salt to taste. Cook for another 3 minutes.

Then blend the soup in a blender. Return to the heat and bring to a boil.

When serving, pour in each saucer some cream and garnish with greens.
