Mackerel defrosted. Gently along the ridge to cut the fillet. Cut into slices 1-1,5 cm Put in a deep bowl.
Mix 4 tbsp rice vinegar, 1 tbsp sugar, 0.5 tbsp of salt. Pour the marinade the fish. Leave to marinate for 60 minutes.
An hour to shift the fish into another bowl. In the marinade put sliced onion half rings and heated without boiling. This process will make the onion softer and will remove the bitterness. Onion drain and allow to cool. To add to the fish the Korean carrot and pickled onions.
Oil heat, pour in the fish. Add chili sauce to taste. Very gently stir. Leave to marinate for 3-4 hours.
After 3-4 hours put the fish on a plate. In the centre of the plate lay heaped carrots and onions.
