Glass eggplant
Chinese glass eggplant is a wonderful example of the unusual, colourful, exotic snacks.

Ingredients

  • Eggplant

    4 piece

  • Vegetable oil

    1 l

  • Brown sugar

    100 g

  • Soy sauce

    4 Tbsp

  • Chili

    1 piece

  • Water

    50 ml

  • Sesame oil

    1 tsp

  • Vinegar

    1 tsp

  • Honey

    1 Tbsp

Preheat a skillet vegetable oil for deep frying. Eggplant cut into circles. Fry until Golden brown in deep fat for 1-2 minutes. They have to be roasted inside, but not turn into mush..

For glaze, mix all ingredients and bring to a boil. Reduce the heat to medium and boil the glaze for 3 minutes until thick. Remove from the heat.

Dip the eggplant in the frosting, shift them on a lattice and allow to dry.
