Cooking
Saute the chopped onion in a little vegetable oil until soft.
Zucchini cut into equal parts.
Add the zucchini to the onions and saute for a few minutes.
Cut the potatoes into as equal pieces (a little smaller than the slices of zucchini, because potatoes take longer to cook).
Add potatoes to zucchini, still put out a few minutes.
Teaspoon curry paste (can be 1/2 teaspoon), add to zucchini and potatoes a good stir, so that the paste is evenly distributed and put out a couple of minutes.
Pour vegetables with chicken or vegetable broth.
Season with salt and pepper and bring to a boil. Once boiling, reduce heat, cover and cook for 20 minutes.
Remove from heat and blend until smooth.
The soup is ready! Can be served with crackers.
