Ingredients

  • Eggplant

    2 kg

  • Beans

    1 kg

  • Carrots

    0.5 kg

  • Pepper

    0.5 kg

  • Tomato

    1.5 kg

  • Onion

    3 piece

  • Garlic

    300 g

  • Vegetable oil

    0.5 l

  • Vinegar

    100 ml

  • Salt

    70 g

  • Sugar

    150 g

Cooking

Boil the beans. If beans are dried, then pre-soak for a few hours.

Eggplant cut into cubes, sprinkle with salt and leave for 1 hour.

Carrots cut into cubes and fry with chopped onions.

Peppers and tomatoes cut into cubes, combine with the eggplant.

Garlic cut is not very finely, add to the vegetables. There also send and onion with the carrots.

In a deep saucepan pour the remaining oil, vinegar, add salt (if left) and sugar. Bring to the boil and put there vegetables.

Bring to a boil and simmer on low heat for 1 hour.
