Marinated eggplant
This appetizer of eggplant, I first tried my mother-in-law. Very tasty and spicy eggplant will decorate any festive table and will be a wonderful snack for any company! Help yourself!

Ingredients

  • Eggplant

    2 piece

  • Parsley

    1 coup

  • Vinegar

    1 cup

  • Salt

  • Soy sauce

    4 Tbsp

Eggplant wash, put in cold water, bring to boil and simmer for about 10 minutes. Readiness check with a fork. The plug should be easy to get in eggplant.

Take out of pans and allow to cool.

Then cut into small pieces.

Fill a pot with a layer of eggplant, chopped parsley, a little salt, and drizzle with the vinegar and soy sauce. Then another layer of eggplant, parsley, salt, vinegar and soy sauce, and so all the eggplant.

I use soy sauce "Kikkoman"

Cover with a plate, put the cargo and put into the fridge for a week.

A week later, the eggplants are ready!
