Spring nettle soup
My Belgian friend taught me to cook nettle soup! You want to try? Then let's cook.

Ingredients

  • Cauliflower

    1 piece

  • Nettle

    400 g

  • Potatoes

    3 piece

  • A bouillon cube

    3 piece

  • Salt

  • Black pepper

  • Cream

  • Water

    1.5 l

  • Onion

    1 piece

I always get soups-mashed potatoes to a minimum time and the maximum of usefulness and taste. The process is the same. Take one large onion, peel and coarsely cut, fry in a saucepan in olive oil (reduced number of dishes to wash ????).

My cauliflower, cutting unnecessary outer leaves and put the buds in a pan.

Add peeled and sliced potatoes.

Add 1.5 litres of boiling water.

Add bouillon cubes or your favorite spices to Your taste. Try and then add salt.

Cook on low heat with closed lid for 25 minutes.

Add the nettle leaves and continue to simmer on very low heat for another 5-7 minutes. Collect nettle with gloves on, away from civilization, my gloves, I put straight twigs, nettle (I love fiber, but you do not advise, can get fiber and it will be frustrating). Here I have frozen young nettles (this is the case when there is no time to collect).

Here is our soup and ready. Porirua in a blender, taste, add the garlic and black pepper to taste.
