Juicy salad-appetizer
Summer is coming, and that means there are a lot of tasty and fresh vegetables! I want to offer you a salad that combines juicy summer vegetables and tender chicken meat. Spicy, slightly tangy, good as a snack or even a main dish.

Ingredients

  • Eggplant

    1 piece

  • Tomato

    2 piece

  • Mushrooms

    100 g

  • Chicken breast

    1 piece

  • Cheese

    100 g

  • Garlic

    2 tooth

  • Vegetable oil

    4 Tbsp

  • Seasoning

    0.5 tsp

  • Lemon juice

    2 Tbsp

  • Soy sauce

    1.2 tsp

Cooking

First cut into slices the chicken breast and fry in a little oil until light Golden brown. In the process of cooking add the soy sauce and 1 clove of minced garlic.

Eggplants we shall cut cubes, add salt and Otavi for 10-15 minutes to drain the bitterness.

Tomato - diced. It is best to take two tomatoes, then the salad will be juicier, I have only had one.

Mushrooms and eggplant fry in a very small amount of oil until tender.

Cheese also cut into cubes. This salad will combine well soft cheese (ideally mozzarella).

Prepare the dressing of oil+lemon juice+ garlic+Italian herbs. I this oil is prepared in advance - insist a few days, it is good to use for salads and other dishes.
