Lecho zucchini
Recipe as found on one of the culinary sites now - one of my favorite salads, and the kids are happy to eat with hot potatoes-mashed potatoes very tasty.

Ingredients

  • Tomato

    3 kg

  • Carrots

    3 kg

  • Red sweet pepper

    3 kg

  • Zucchini

    2 kg

  • Vegetable oil

    1 cup

  • Vinegar

    150 g

  • Sugar

    2 Tbsp

  • Salt

    3 Tbsp

Cooking

Start: tomatoes through a meat grinder or blender

Zucchini slices or polukruzhochkami, bell pepper, carrot sticks (carrots can be rubbed on a grater for Korean carrot)

Put all the ingredients in a large pot in which to stew the vegetables, add the oil, vinegar, sugar, salt, mix well and simmer for 30-40 min, I'm a little more than a carcass somewhere 50 min.

Then sterilize them by banks, I do it over the kettle, sterilized jar 3 min.

The Bank sterilized, filled with salad, rolled up, turned over, wrapped and cooled. Bon appetit!
