Cuisine of Ecuador is considered to be one of the most ascetic and the most delicious in the world. Ecuador is the only Latin American country that managed to retain the most complete culinary traditions of the Indian peoples that inhabited the territory before the arrival of Europeans. Traditional Ecuadorian cuisine astonishingly varied and unusual taste. Branch Championships of the national cuisine belongs, oddly enough, the soups. Potato cheese Locro soup and avocado - one of the many options. Potatoes and avocado is still exotic for us, but I strongly recommend to try a soup with these ingredients, though, in order to appreciate the taste of this magnificent dish! Help yourself!

Cooking
Garlic peel and finely chop.
Onion peel and cut into strips.
In a saucepan, heat the oil, add the garlic, onion, cumin and sauté, stirring occasionally, until the onions are soft and Golden, about 5 minutes.
Potatoes peel. Cut into small and large slices.
In a pan add the potatoes, stir so that the potatoes are completely covered with chive butter. Continue to cook about 5 minutes, stirring every 2 minutes.
Pour hot water, bring to a boil and cook until the potatoes are soft.
Once the potato is cooked, take the pan off the heat and blend with a pestle, especially don't go overboard. Consistency of soup should stay with small pieces of potatoes.
Return the saucepan on the fire, pour soy sauce, hot milk and cook for another 5 minutes. If the soup is too thick, add milk to obtain desired consistency.
Mozzarella to grate on a coarse grater. Mozzarella can be replaced with feta cheese.
Green onions, rinse, dry and finely chop.
In the soup add cheese, mix well, add salt and pepper to taste. Remove from the heat.
Serve with avocado, green onion and cheese. Bon appetit!
