Canned mackerel with eggplant
I use this recipe for a few years. Very tasty fish - vegetable canned food. Are perfectly preserved. Know that now is not the preserving season, but I think that someone will take note. With this quantity of ingredients makes about 5 litres. This year I did 2 portions: not even one jar, and it was December)

Ingredients

  • Eggplant

    1 kg

  • Onion

    1 kg

  • Carrots

    2 kg

  • Mackerel

    1.5 kg

  • Vegetable oil

    200 ml

  • Salt

    3 Tbsp

  • Sugar

    5 Tbsp

  • Tomato paste

    200 g

  • Water

    100 ml

  • Vinegar

    7 Tbsp

  • Bay leaf

    3 piece

  • Black pepper

Cooking

Eggplant wash. Cut into cubes (1cm×1)

Onion cut into cubes. Carrots grate on a coarse grater ( forgot to take a picture. Sorry) Mackerel cleaned from head and bowels. It is good to wash. Boil until tender. Remove the skin and bones. Break hands to pieces. ( and again I forgot to take a picture)

Mix all ingredients ( except fish and vinegar). On medium heat bring to a boil. Stew within 15 min. after this time, add the mackerel. Simmer for another 1 hour. Add vinegar. Stew for another 5 min.

Arrange the salad on sterilized banks. Close. Flip. Wrap until cool.
