Mostacolli
I mustaccioli biscuit filled with that have survived till today from Ancient Rome. Traditional Christmas cookie of the province of Lucca (Tuscany).

Ingredients

  • Almonds

    280 g

  • Flour

    250 g

  • Sugar

    150 g

  • Water

    200 g

  • Cocoa powder

    25 g

  • Leavening agent

    0.5 pack

  • Carnation

    0.25 tsp

  • Cinnamon

    0.25 tsp

  • Nutmeg

    0.25 tsp

  • Brandy

    50 g

  • Lemon peel

  • Orange zest

  • Figs

    6 piece

  • Raisins

    40 g

  • Dark chocolate

    100 g

  • Powdered sugar

    200 g

Cooking

Almond peremel in a coffee grinder into flour. On the desktop, mix the two flours (wheat and almonds). Make a deepening in the middle-a hole and add all the other ingredients. The zest of lemon and of orange grate and add to the dough.

Knead the dough and let rest for about 15 minutes. The dough will not be stretchy and will slightly stick to the hands. Roll out the dough, "helping" a little (but not much!!!) poured flour.

Meanwhile, make the filling: figs, raisins and almonds cut into small pieces. I've done figs and pine nuts. All will mix.

Round cookie cutter cut out circles. Each circle in the center put a teaspoon of stuffing.

Cover top with another circle. Well primem fingers region. Bake in preheated oven for 15 minutes at 180°. Give a well to cool.
