The sauce
This sauce, a signature recipe of one of the Tula chefs in a cafe like this sauce served with the kebabs and all dishes cooked on the grill. Highly recommend to cook it, it is very tasty and suitable not only for the kebabs.

Ingredients

  • Vegetable oil

    150 ml

  • Chicken egg

    1 piece

  • Salt

  • Vinegar

    1 Tbsp

  • Mustard

    1 tsp

  • Onion

    1 piece

  • Mushrooms

    50 g

  • Gherkins

    50 g

  • Tomato paste

    1 Tbsp

  • Tabasco

    0.5 tsp

  • Marinade

    1 Tbsp

It's the necessary products. You can use ready-made mayonnaise, or make your own according to your favorite recipe. My photo products given that mayonnaise prepare yourself.

I'm doing so. In the blender pour vegetable oil, to drive a raw egg, add salt and vinegar. In this recipe I don't put mustard on this stage and add it later directly in the sauce, but it does not matter.

Then whisk it with a blender (nozzle blades) for 3-4 minutes, and all our mayonnaise is ready.

Onions and mushrooms cut into small cubes (not more than 0.5 cm)

As I have in this case, canned mushrooms, I first fry the onion until almost cooked, if fresh mushrooms, then fry first the mushrooms.

Add mushrooms, stir fry for 2-3 minutes and leave to cool.

In mayonnaise add the mustard, tomato sauce, Tabasco, stir.

Gherkins cut into cubes not more than 0.5 cm

Add them to our sauce, if the sauce is thick, you can add a bit of the marinade from the cucumbers, I in this case do not have.

And the final touch, add fried mushrooms with onions. Stir and the sauce is ready.

As I wrote above, this sauce is perfect for any hot dishes, it is also delicious with boiled potatoes, but it was created just as a sauce to dishes from the grill. Please try and enjoy!
