Chutney eggplant
Spicy sauce of summer vegetables. A great alternative to traditional vegetable caviar.

Ingredients

  • Eggplant

    2 piece

  • Onion

    1 piece

  • Pepper

    1 piece

  • Chili

    0.5 piece

  • Tomato

    2 piece

  • Apple

    1 piece

  • Garlic

    2 tooth

  • Honey

    1 Tbsp

  • Vinegar

    1.5 Tbsp

  • Salt

    1 tsp

  • Black pepper

    0.125 tsp

  • Soy sauce

    2 Tbsp

  • Vegetable oil

    5 Tbsp

Cooking

Vegetables to prepare. Onion cut into cubes and send to the skillet with hot oil. Fry until soft and light brown colour.

Eggplants remove skin, cut into dice. Increase the heat under the saucepan and shred eggplant. Cook 5 min., stirring occasionally.

Tomatoes, peppers and Apple cut into cubes, garlic slices. Reduce heat and send the vegetables to the eggplant. Mix and cook until soft.

Once the vegetables are soft, add soy sauce, salt, honey, vinegar and spices. Vegetables stir, cover the saucepan with a lid and simmer chutney on low heat for 15-20 minutes. chutney is Ready transfer to a jar and cool.
