Wash well the mushrooms, cut them thin slices,
Put in a saucepan, adding 1/3 of the butter, salt, pepper and 2 tbsp water. Close the saucepan with a lid, and stew the mushrooms over low heat for 10-15 minutes.
The cleaned and gutted fish, RUB inside and out with salt.
The oil rubs with raw egg yolks,
And proteins are whipped into foam.
Add the mushrooms and stir, sprinkle with salt and pepper.
Across fish make cuts. Fill the prepared stuffing in the fish abdomen, spread on a baking sheet, pour melted butter and bake in the oven at 170 gr. 25 minutes.
Take out the fish from the oven and sprinkle with grated cheese, bake it in the oven for another 20 minutes.
