Cooking
Cook sugar syrup. To do this, take 365г sugar and dissolve in 135мл water. Bring to a boil and cook over low heat 10-12 minutes. Let cool at room temperature.
The softened butter beat with a chilled sugar syrup, adding the syrup little by little. Most importantly, the syrup should be completely cooled.
Separate the yolks from the whites. Proteins are immediately set aside. Whisk the egg yolks and add to oil mixture. Peel the almonds and grind in a blender or finely grind them.
