Appetizer of eggplant

  • Garlic

  • Shallots

Eggplant cut in half lengthwise, with a knife cut the flesh to make a mesh. Clove of garlic cut into thin plates, I have divided them into two parts, thyme leaves separated from the twigs, shallot cut in small cubes (shallots can be replaced by an ordinary bulb).

Thoroughly RUB the flesh of the eggplant with salt, pepper, liberally smeared with olive oil.

Pressed plates of garlic and the leaves of thyme into the incisions. For convenience, I put the eggplant halves on a baking sheet on it and placed them in heated to 210*C oven for 45 minutes (focus on your oven and check for readiness with a fork or wooden spokes).

Add to the pan flesh of the eggplant, continue cooking for another approximately 5 minutes.

Remove from the pan, pour in the remaining olive oil, cool down and give you a snack to serve.
