Eggplant cut in half lengthwise, with a knife cut the flesh to make a mesh. Clove of garlic cut into thin plates, I have divided them into two parts, thyme leaves separated from the twigs, shallot cut in small cubes (shallots can be replaced by an ordinary bulb).
