Soup-puree of pumpkin

  • Pumpkin

Onions and carrots we shall cut cubes and fry in olive oil until soft.

Pumpkin peel and seeds, finely chop and add to the vegetables, fry all together for 5 minutes. Pour water (or vegetable broth), add salt, add sugar (optional, I have a pumpkin sweet, so I'm not adding) and simmer on low heat for another 10 minutes.

Apple and pear peel and core, cut into cubes

and add to vegetable mixture along with cinnamon. Simmer all until tender. Grind immersion blender.
