Tomato soup with beans and pumpkin
Will show you a very tasty and hearty soup that is great on fasting days.

Ingredients

  • Beans

    1 cup

  • Red onion

    2 piece

  • Carrots

    1 piece

  • Pumpkin

    500 g

  • Garlic

    2 tooth

  • Tomatoes in own juice

    1 l

  • Broth

    1 l

  • Salt

  • Black pepper

To prepare the soup, I used the beans "black eye" brand Mistral. It is not necessary to pre-soak, but if you use some other variety, it must be soaked overnight. Then boil for 1 - 1.5 hours, depending on variety. At the end of cooking drain the water.

Pumpkin remove seeds and peel.

Peel the onion, garlic and carrots, cut. In a frying pan, heat few spoons of oil, add the vegetables and fry for a few minutes.

Now add the pumpkin and pour in the pureed tomatoes. Simmer until soft pumpkin.
