Cooking
This soup is very good to cook in the pot that it had long languished on a slow fire. To begin with we put on the fire a pot of water. Wash the hearts and drop into the water.
Stomachs wash, peel, cut and drop into pan. After boiling, remove the foam and tormented all on low heat for 40 minutes.
Wash liver, put in boiling broth, cook for another 20 minutes. Then the giblets must be removed, and strain the broth. And again, all connected and set on fire.
After 5 minutes, add chopped carrots and onions.
After another 5 minutes add chopped celery
and pepper. Now you can add salt, season with favorite herbs and Bay leaf. The soup is ready. Gentle, quite thick and hearty, very flavorful.
