All kind time of day. I want to share with You my recipe for Borodinsky bread. I know that on the website there is not one. I have this recipe adjust to your tastes. I would be glad if someone the recipe handy.

Ingredients

  • Yeast

    2.5 tsp

  • Flour

    400 g

  • Rye flour

    150 g

  • Water

    400 ml

  • Honey

    1.5 Tbsp

  • Malt

    5 Tbsp

  • Salt

    1.5 tsp

  • Vinegar

    2 Tbsp

  • Cardamom

    2.5 tsp

  • Vegetable oil

    2 Tbsp

  • Coriander

    2 Tbsp

Lay all ingredients in a bucket according to HP instructions.

Select the mode "Basic" size M (my HP is 400-500 g of flour), the crust color - the "Light". Click "Start". If You do not have KHP in a small amount of warm water (50-70 ml) (36°C), dissolve the yeast and clean for 10 minutes in a warm place. Then add the remaining water, salt, vinegar, stir, add sifted two kinds of flour, malt (brewing it is not necessary), honey, vegetable oil, cardamom and coriander. Knead the dough. To put it in the oiled bowl, cover with plastic wrap and put in a warm place for 1 hour. Then punch down dough and form a bun. Put it in a greased form, put in a warm place for proofing (40-45 min). Preheat the oven to 250°C, put the bread in, reduce the temperature to 220°C and bake for 40-50 minutes, consider your oven!
